RECIPE PREPARATION Macaroni and cheese:

Put salt water in a pot. When it boils, add the pasta, let it boil as it says on the bag. When they are ready, rinse them with warm water, put them in a pot with a little oil, a little salt and spread the bellows cheese. Leave it on the fire until it melts, mix well and serve with sugar!

How to prepare macaroni and cheese in the oven

In my childhood, there was probably only telemea in stores, so this is my reference taste. But these pasta with cheese and baked raisins they come out very good and if you use cow's cheese, curd, urda or any combination between them.

I talked more about this simple recipe and the combinations of ingredients that can be made in the video posted on the YouTube channel. You can find it below, under the written recipe and there you can see exactly how I prepared this childhood dessert.

Macaroni and cheese

Put a saucepan of boiling water, add salt.

When it boils, put the macaroni and boil according to the instructions.

After the macaroni has boiled, drain the water, rinse quickly under running cold water.

The cheese is put on the grater with a small mesh.
Heat the 2 tablespoons of oil in a saucepan and pour over the pasta.

Mix with grated cheese.

Mac and cheese

Fortunately, so far I have not found any recipe that can not be adapted to the vegan style. Here's how a recipe based on several types of cheese was adapted very easily. Because I also tested the non-vegan version and more recently the vegan one, I can tell you with confidence that the second one is tastier. So feel free to try it.

In the oven I used a ceramic pot with dimensions 15X25 cm, and from the ingredients below I made 2 portions.

  • 250 g paste
  • 200 g cauliflower
  • 50 g flour
  • 30 ml coconut oil
  • 500 ml of milk
  • 130 g soy cheese (cheddar type)
  • 15 g of inactive yeast
  • 1 tablespoon mustard
  • 3 cloves of garlic
  • 1 tablespoon soy sauce
  • 1/2 teaspoon smoked paprika
  • green basil
  • salt pepper

1. Boil the pasta according to the instructions on the package, less than 5 minutes because they will stay in the oven. Add the bouquets to the pasta water and the cauliflower. They need about the same cooking time.

2. Separately, in a large frying pan, mix the coconut oil with the flour. Put the pan on low heat, add the milk and mix until a thick cream is formed. Add the inactive yeast, the shredded cheese, the mustard, the garlic cloves given through the press, the soy sauce, the smoked paprika, salt and pepper. Leave them for another 2-3 minutes until the cheese melts completely and the flavors intertwine.

You can use any type of cheese with the mention that it must melt.

3. Strain the pasta and cauliflower, add them over the sauce we made and transfer the whole mixture into the ceramic bowl. Season with inactive yeast and a few finely chopped green basil leaves. Put the bowl of vegan macaroni in the oven at 180 g, with ventilation, for 20-25 min.

400 gr macaroni (or any kind of pasta you prefer)
250 gr salted cheese (or sweet cottage cheese)
3-4 eggs
1 can of Hopla (if you don't have 8 tablespoons of sour cream)
5 tablespoons sour cream or yogurt (I prefer sour cream)
butter
salt

Boil the pasta in salted water, respecting the cooking time written on the package. After they are boiled, we pour them into a strainer, then we pour a cup of cold water over them and let them drain.

Beat the eggs well, add the cheese crushed with a fork (or put on a large grater), sour cream and Hopla box.
In a bowl greased with butter put the pasta, pour the cheese composition and mix lightly. Bake in a preheated oven at 180 degrees for 40 minutes, until golden brown on top.
You can serve them with sugar, hot or cold.

Macaroni pudding recipe with cheese and cranberries

Even if the classic recipe, from childhood, was with raisins, cranberries are not inferior either. We like them because they are more sour. But if you want to get the taste of yesteryear you can use raisins.

The mother-in-law is a specialist in the preparation of this pudding. And the cheese composition was a mixture of sweet cheese and salted cheese. About 3/4 sweet cheese and 1/4 salted cheese. This mixture of cheeses in a dessert is delicious. It feels sweet and salty at the same time. I use the pie combination quite often.

This time, however, I only used sweet cheese. I had it in the fridge and I had to get rid of it.

I also prepare, when I have more time, this pudding with burnt sugar icing. It's really special so caramelized. With the burnt sugar, glaze the tray before assembling the pudding in it. After baking, the pudding turns upside down and will look very appetizing so glazed.

I think that's how I'll prepare it next time.

For now, we have pampered ourselves with this wonderful and simple macaroni pudding with cheese.
